Ingredients

For the Salsa
  • 4 peaches, chopped
  • ½ medium red onion, diced
  • 2 cloves garlic
  • 1 cup cilantro, chopped
  • 1 jalapeño, chopped
  • 1½ tablespoons lime juice
For the Chicken
  • 4 (6-ounce) pieces chicken (breasts, thighs, or drumsticks)
  • 2 tablespoons Southern seasoning blend (see seasoning blend page)

Instructions

  1. Wash hands with soap and warm water.
  2. Preheat oven to 400°F.
  3. In a medium bowl, stir together chopped peaches, red onion, garlic, cilantro, jalapeño, and lime juice. Cover and refrigerate until ready to use.
  4. Arrange the chicken on the center of a pan and drizzle with oil. Sprinkle 1 teaspoon of the Southern Blend on each piece of chicken and rub in seasoning.
  5. Bake:
    • 10–15 minutes for chicken breasts
    • 25–30 minutes for chicken thighs
    • 15–20 minutes for drumsticks
  6. Turn chicken over and sprinkle the remaining seasoning mix over the chicken. Bake for an additional 15 minutes or until chicken reaches an internal temperature of 165°F.
