Build Your Own Stir Fry

Ingredients
1 tablespoon vegetable oil 1 pound chicken breast or thigh (or protein of choice) 1½ cups brown rice (or grain of choice), cooked 1 onion, chopped (about 1 cup) ½ cup snap peas ½ cup sliced carrots ½ cup bell peppers, sliced ½ cup zucchini, chopped ½ cup okra, chopped 1 tablespoon stir fry seasoning blend Salt and pepper to taste
Recipe Instructions
- Wash hands with soap and warm water before preparing food.
- Peel and chop 1 onion to yield about 1 cup of chopped onion.
- In a large frying pan, heat 1 tablespoon of vegetable oil over medium-high heat (about 2–3 minutes).
- Add your protein of choice and cook until fully done.
- Add chopped onion to the pan. Stir and cook for about 2 minutes, or until onion becomes translucent.
- Add stir fry seasoning and cook for about 30 seconds, stirring to combine.
- Rinse and prepare vegetables as needed, then add them to the pan.
- Stir all ingredients together and cook for 3–5 minutes, until vegetables are heated through and just tender. Stir occasionally to prevent sticking.
- Serve 1 cup of the stir fry mixture over ½ cup of cooked rice per serving.
