Ingredients
- 1 (16-ounce) box dry pasta
- 1 (2-pound) bag frozen shrimp, peeled and deveined
- 1 tablespoon vegetable oil
- 1 tablespoon Mediterranean seasoning blend
- 1 small onion, diced
- 1 (8-ounce) can mushrooms, drained, or 1 cup fresh mushrooms, sliced
- 2 cups fresh spinach or 1 package frozen spinach
- 1½ cups low-sodium tomato sauce
Instructions
- Wash hands with soap and warm water.
- Cook pasta in unsalted water according to package directions. Drain and set aside.
- If thawing shrimp beforehand, pat dry with a paper towel.
- Heat oil in a large skillet over medium heat. Add shrimp and Mediterranean seasoning blend. Cook 4–5 minutes, or until shrimp reaches an internal temperature of 145°F. Remove and set aside.
- In the same skillet, cook onions, mushrooms, and spinach for about 5 minutes.
- Stir in tomato sauce and return shrimp to the skillet.
- Add cooked pasta and toss to coat evenly.
- Simmer for 1–2 minutes and serve.
