Build Your Own Stir Fry

Ingredients

1 tablespoon vegetable oil 1 pound chicken breast or thigh (or protein of choice) 1½ cups brown rice (or grain of choice), cooked 1 onion, chopped (about 1 cup) ½ cup snap peas ½ cup sliced carrots ½ cup bell peppers, sliced ½ cup zucchini, chopped ½ cup okra, chopped 1 tablespoon stir fry seasoning blend Salt and pepper to taste

Recipe Instructions

  1. Wash hands with soap and warm water before preparing food.
  2. Peel and chop 1 onion to yield about 1 cup of chopped onion.
  3. In a large frying pan, heat 1 tablespoon of vegetable oil over medium-high heat (about 2–3 minutes).
  4. Add your protein of choice and cook until fully done.
  5. Add chopped onion to the pan. Stir and cook for about 2 minutes, or until onion becomes translucent.
  6. Add stir fry seasoning and cook for about 30 seconds, stirring to combine.
  7. Rinse and prepare vegetables as needed, then add them to the pan.
  8. Stir all ingredients together and cook for 3–5 minutes, until vegetables are heated through and just tender. Stir occasionally to prevent sticking.
  9. Serve 1 cup of the stir fry mixture over ½ cup of cooked rice per serving.
