Red Shrimp Scampi is a simple and satisfying pasta meal that combines succulent shrimp with vegetables and Mediterranean flavors. Spinach, mushrooms, and onions add color and nutrition, while a light tomato sauce coats the pasta for a delicious finish.

Ingredients

  • 1 (16-ounce) box dry pasta
  • 1 (2-pound) bag frozen shrimp, peeled and deveined
  • 1 tablespoon vegetable oil
  • 1 tablespoon Mediterranean seasoning blend
  • 1 small onion, diced
  • 1 (8-ounce) can mushrooms, drained, or 1 cup fresh mushrooms, sliced
  • 2 cups fresh spinach or 1 package frozen spinach
  • 1½ cups low-sodium tomato sauce

Instructions

  1. Wash hands with soap and warm water.
  2. Cook pasta in unsalted water according to package directions. Drain and set aside.
  3. If thawing shrimp beforehand, pat dry with a paper towel.
  4. Heat oil in a large skillet over medium heat. Add shrimp and Mediterranean seasoning blend. Cook 4–5 minutes, or until shrimp reaches an internal temperature of 145°F. Remove and set aside.
  5. In the same skillet, cook onions, mushrooms, and spinach for about 5 minutes.
  6. Stir in tomato sauce and return shrimp to the skillet.
  7. Add cooked pasta and toss to coat evenly.
  8. Simmer for 1–2 minutes and serve.
